Mostimeter correction tableWhat is the mostimeter?
The mostimeter is an element of the areometers family, with which we can evaluate the sugar richness and alcohol content of the wine, according to the volumetric mass of the grape (in g / dm3), after complete fermentation. Another function for which a mostimeter will also be useful is to determine the optimum time for harvesting or racking.
The volumetric mass of the juice increases during the ripening period to later stabilize. At the moment when the sugar content is maximum, it is possible to harvest. Quite the opposite happens during fermentation, the volumetric mass of the juice and the proportion of sugar decrease until it stabilizes at its minimum, at the moment that all the sugar has already fermented, we can say that the wine is already made.
How to use the mostimeter?
- Keep the mostimeter always clean, wash it under running water after each use and store it in a case.
- Read the volume mass above the meniscus, this density marks the laboratory temperature.
- You must correct that reading to get the volumetric mass to be at 20º, for this we provide you with the values below (table 1).
- Table 2 indicates the sugar content and the probable alcohol according to the volumetric mass corrected to 20º.
- The use of a thermometer is essential.
